(serves 12)
Mix together for the batter:
- 1 cup of coconut oil
- 4 eggs
- 2 tsp of vanilla
Add into the batter:
1 ½ cups of maple sugar or date sugar
Mix until the batter has a smooth consistency.
Then add these ingredients to the batter mix:
- 3 cups of shredded beets
- 1 cups of chopped walnuts or almonds
In a separate bowl mix together a flour mix:
- 2 cups of flour
- 2 tsp of baking powder
- 1 ½ tsp of baking soda
- ½ tsp of salt
- 2 tsp of cinnamon
Add in the flour mix into the mixer with the rest of the ingredients.
Set the mixed batter into the cupcake pan with each individual cupcake liner in place.
Bake at 350 degrees for about 30 minutes.
Make the cream cheese frosting next with these ingredients:

Mix together:
- 8 oz of cream cheese
- ½ pint of heavy whipping cream
- 2 tbs of maple syrup
- 1 tsp of vanilla
- 6 drops of green food coloring
Take the cupcakes out of the oven and let them cool down before applying the icing mix.
Apply the icing once the cupcakes are cooled down enough.
Add pomegranate jewels on top of the iced cupcake to give it a festive touch for the holidays.
